Mozzarella-stuffed Turkey Patties |

Turkey,
ground - 1 pound Egg, whole, lightly beaten - 1 each Dried oregano -
½ teaspoon Scallion, green only, sliced - 2 each Plain
breadcrumbs - ½ cup Kosher salt - ½ teaspoon Pepper,
black, freshly ground - ¼ teaspoon Mozzarella, fresh, sliced - 8
ounces
Flour, all purpose - 1 cup Cayenne pepper - ½ teaspoon Kosher
salt - ½ teaspoon Vegetable oil - 2 tablespoons
Preheat
oven to 350f. Whisk together flour, cayenne, and ½ teaspoon salt.
In
a mixing bowl, knead together first seven ingredients. Form into four
patties; place sliced mozzarella toward the center of two patties leaving
about ½ inch boarder. Press top with two remaining patties and press
gently together. Dredge in flour mixture and sauté in hot vegetable oil
till golden brown on both sides. Finish in oven for about 7 minutes. Serve
over pasta or a green salad.
