Chicken Pannini with Fresh Mozzarella PDF Print E-mail
Chicken breast, grilled or sautéed - 1 each
Mozzarella, fresh, sliced - 4 ounces
Green Spanish olives, pimento stuffed, sliced - 4 each
Red onion, thinly sliced - to taste
Mayonnaise - 1 teaspoon
Seeded mustard - 1 teaspoon
Potato bread, sliced - 2 slices

Assemble sandwich components from bottom up as follows: Bread, mustard, chicken, mozzarella, olives, onions, and mayonnaise on top slice of bread. Grill on pannini grill or in a sauté pan. Serve warm.
