Smoked Salmon and Mozzarella Rollup PDF Print E-mail
(makes two 16” rolls)


Smoked salmon, sliced - 8-10 ounces
Fresh mozzarella, sliced - 4 ounces
Mascarpone - ¼ cup
Capers - 3 tablespoons
Fresh dill, chopped - 2 tablespoons
Red onion, chopped - 2 tablespoons
Tortillas, 16” - 2 each
Fresh limejuice - ½ lime
Salt and pepper - to taste

Mix together mascarpone, limejuice, dill, onion and season with salt and pepper. Spread mixture evenly over tortillas. Lay smoked salmon, then mozzarella over entire surface. Scatter capers evenly over top.

Roll tortillas tightly, cut on the bias (diagonally) and serve with a wedge of fresh lime.
