Ham and Mozzarella Pannini PDF Print E-mail
(makes two sandwiches)

Foccachia bread, sliced open - 4 pieces
Ham or pancetta, sliced - ½ pound
Fresh mozzarella, sliced - 6 ounces
Sun dried tomato puree - 4 tablespoons
Arugula - 4-6 leaves
Seeded mustard - to taste

This simple sandwich is absolutely delightful! Warm ham or pancetta in sauté pan. On bottom slice of bread, spread sun dried tomato puree, and mustard on other. Start with ham on bottom, then Mozzarella Fresca fresh mozzarella, top with arugula. A variation: Broil and serve open-face with mustard spread on top of ham; top with sliced mozzarella two minutes before the pannini come out of the oven.
