(makes two 16” wraps)
Smoked salmon, sliced - 10-16 ounces
Cryovac mozzarella, sliced thin - 16 ounces
Watercress - ½ bunch
Mascarpone - ½ cup
Fresh dill, minced - 2½ tablespoons
Lemon juice - ½ lemon
Salt & white pepper - to taste
Mix together Mozzarella Fresca Mascarpone, fresh dill, lemon juice, salt and white pepper. Spread mascarpone sauce evenly on one side of each wrap. Evenly spread the smoked salmon to cover each wrap; repeat for mozzarella and watercress. Roll tightly, but be careful not to tare the outside. When rolled up, cut in half on the bias (diagonally). This can be done as bite-sized roulades or as a complete sandwich.
