Marinated Ciliegine Skewers with Gorgonzola Sauce PDF Print E-mail

(for 2 pounds of mozzarella)

Marinated mozzarella - 2 pounds
Red and red bell peppers - 1 each
Cherry tomatoes - 1 basket
Fennel - 1 bulb
Salami - ½ pound

For Sauce
Marinade oil - 1 cup
Vinegar, red wine - 1/3 cup
Gorgonzola - ½ cup
Kosher salt - to taste
Fresh ground pepper - to taste

Cut all items for skewers into bite-sized pieces. Skewer all ingredients, alternating colors for esthetic appeal. For Sauce: Whisk together all ingredients. (Depending on the consistency, you may need to mash the gorgonzola with a fork.)
