Tortellini Salad with Marinated Mozzarella PDF Print E-mail
Ingredients
1 Package Fresh Tortellinispas_tortacil.jpg
8 oz Fresh Marinated Mozzarella
1 basket Red and Yellow Cherry Tomatoes
Kosher Salt and Black Pepper


Method
This is one of those recipes that you’ll use if
you need something special at the last minute
and don’t have a lot of time. I use packaged
fresh tortellinis from the deli section of the
grocery store. My favorites are the ones filled
with ricotta and spinach, or ricotta sun dried
tomatoes and chicken.

In a pot of boiling salted water, cook tortellinis
according to the instructions on the package. When
they have finished cooking, drain in a colander,
rinse and cool. When they have cooled off, place
in a large mixing bowl. Add contents of marinated
mozzarella, including marinade, tomatoes and season
with salt and pepper. Mix thoroughly and store in
an airtight container in the fridge. Will keep
about 3-4 days.
