1 Lb Dried Ziti or Penne Rigate
3 T Olive Oil
Chopped Garlic
1 Carrot, ¼” Dice
1 Small Onion ¼” Dice
1 Stalk Celery, ¼” Dice
2 lbs lean Ground Pork or Beef
1 16oz Can Tomato Sauce
2 T Dried Oregano
Kosher Salt and Cracked Black Pepper
1 Cup Dry Red Wine
1 Lb Ricotta Cheese
1 Lb plus 4 oz Fresh Mozzarella Cheese, Cryovac


Method
In Dutch oven, heat olive oil and sauté garlic for
a couple of minutes until it just starts to develop color.
Then add vegetables and sauté until they are soft.  
Add meat and slowly start cooking, stirring frequently.
Then add the wine and reduce by half and then add the
tomato sauce and cook uncovered on low heat reducing the
sauce by about half again. Meanwhile, preheat the oven to
450 degrees F. Cook the pasta in rapidly boiling salted
water until it’s about 1 minute less than al dente. Drain
and cool. In a large bowl, combine the pasta, meat and sauce,
ricotta and 1 Lb grated or chopped mozzarella. Mix thoroughly
and spoon into a greased deep casserole dish. Cover with tin
foil and bake for 25 minutes, until bubbly and heated through.
Remove foil and spread the remaining mozzarella cheese on top.
Put back in oven to melt the cheese. Remove from oven and serve!!
