Capellini with Pesto and Perlini® |

Ingredients
1 lb Dried Capellini
1 Cup Prepared Pesto
1 8oz Deli Cup Fresh Perlini
¼ Cup Toasted Slivered Almonds
¼ Cup Extra Virgin Olive Oil
Salt
Method
This is a very simple dish that can be prepared
in about 15 minutes. Of course, your own home-made
pesto is always better than store bought. But there
are some very high grade pestos available at the
market. I choose the ones that bill themselves as
Pesto rather than Pesto Sauce.
Start by cooking Capellini in a pot of rapidly boiling
salted water. While pasta is cooking, take the pesto
and put into saucepan with the olive oil. I always
like to add a little olive oil to my store bought
pest to just loosen things up a bit. Put on the
stove over low heat – only enough to just barely
heat the pesto. When pasta is finished cooking,
drain in a colander and add to pesto along with
just a bit of reserved cooking water. Toss with
sauce and plate, finishing with the almonds and
Perlini.
