Burrata and Pancetta Sandwich PDF Print E-mail

Ingredients
2 Balls Burrataapp_burpanbru.jpg
8 Thick Slices Pancetta
Arugula
Ripe Tomatoes
Crusty Italian Bread
Reduced Balsamic
Extra Virgin Olive Oil



Method
A variation of the classic blt, this one is made with a
few higher-end ingredients and served open-faced.  
Cook pancetta over medium-low turning from time to
time. Drain on paper towel and cool. Toast thich
slices of crusty Italian bread. Layer slices of
tomato, arugula leaves, pancetta slices with chunks
of arugula spread over the top. Or not spread, as
 with the photos and kept in chunks. The reduced
balsamic is made by taking the cheapest balsamic
vinegar you can find (but not the fake balsamic
made with caramel, the real stuff) and reducing
it by 90% in a thick-bottomed sauce pot over a
medium heat. Cool and store in an air-tight
container. Drizzle the sandwich with the
balsamic and olive oil.
