Linguini with Broccoli Rabe, Oranges and Perles PDF Print E-mail
Ingredients
1 lb. Dried Linguinipas_bucarab.jpg
1 Bunch Broccoli Rabe
2 Navel Oranges
2-3 Med. Tomatoes on the Vine    
8 oz Fresh Mozzarella Perles
3 T. Olive Oil
1 T. Whole Butter
Kosher Salt
White Pepper


Method
Cook pasta in rapidly salted boiling water. While pasta
is cooking, peel and segment oranges. Clean and separate
broccoli rabe from the larger stems.  Cut rabe in smaller
pieces. Cut tomatoes into chunks. In a large sized sauté pan,
sauté the rabe in the olive oil over medium heat until it’s
soft. Add tomatoes, oranges and butter and season with salt
and pepper, and then remove from heat. Drain pasta in colander
and add pasta to the other ingredients. Just before serving,
add fresh mozzarella cheese and toss & serve. If mozzarella
Perles are not available, feel free to use Ciliegine sized
