Zucchini and Squash Salad with Fresh Mozzarella and Pistachios |

Ingredients
Yellow Bar Squash
Zucchini
Fresh Mozzarella, Ciliegine
Arugula
Pistachios
Extra Virgin Olive Oil
Red Wine Vinegar
Kosher Salt and Cracked Black Pepper
Method
Slice zucchini and yellow squash into long thin slices.
Place slices in a shallow glass baking dish and cover
with about a 50-50 mixture of olive oil and vinegar.
Allow vegetables to marinate for about an hour. They
should become soft and pliable. Place a layer of
arugula on the bottom of a plate and layer the
zucchini and squash over the arugula. Next add
cheese and pistachios. Drizzle just a bit of
olive oil and vinegar and finish with salt and
pepper.
