Asparagus, Artichokes and Perle Sized Fresh Mozzarella

Ingredients

Artichoke Hearts, Canned halved
Fresh Mozzarella, Perles or Perlettes
Frisee, Mache or Watercress
Extra Virgin Olive Oil
Lemon Juice
Chopped Garlic
Salt and Pepper

Method
This is a simple Mediterranean-style salad that
is very lightly dressed to let the natural flavor
of the few ingredients come through. To start,
trim the asparagus ends and blanch in rapidly
boiling salted water for about 30 seconds.
Transfer to a bowl of ice water to shock
(stop the cooking). Drain and set aside. Drain
the artichoke hearts and clean and dry your greens.
If you like bitter greens use the Frisee or Watercress.
If not, use the Mache. In a side bowl mix the olive oil
and lemon juice at a ration of 3:1 with just touch of
garlic, salt and pepper. Combine he salad ingredients
with the drained cheese and dressing and serve.
