Latin-Style Avocado and Perle Salad

Ingredients
Fresh Avocadossal_avoper.jpg
Fresh Red Bell Peppers
Red Onions
Cilantro
Pumpkin Seeds
Fresh Mozzarella Perles
Toasted Pumpkin Seeds (Pepinos)
Peanut Oil
Lime Juice
Kosher Salt

Method
Peel, core and cut avocados into quarters,
then slice lengthwise. Peel and slice red
onion into strips. Cut rep peppers crosswise,
removing seeds and veins. Chop cilantro.
Arrange avocados on plate and later red
onions and red peppers over the top. Sprinkle
with chopped cilantro, pepinos and cheese.
Drizzle a little peanut oil over the top and
then a squeeze of lime. Finish with a dash
of salt and serve.
