Roasted Tomatoes with Fresh Mozzarella |

Ingredients
Mozzarella Fresh Mozzarella
Roma Tomatoes
Basil
Extra Virgin olive Oil
Balsamic Vinegar
Kosher Salt
Method
For those people (like me) that enjoy the
intense flavors, this dish is for you.
I didn’t include exact ingredient measurements
because for this dish they’re not really
necessary. And while it may seem complicated,
it’s really quite easy. However, this recipe
does require a little patience. Simply cut
the roma tomatoes in half and toss with a
little olice oil in a bowl. Then lay flat
on a oiled cookie sheet, cut side down, and
roast in a 300° oven for about 45 minutes
to an hour. After about 15 minutes, take the
pan out and remove the skins from the tomatos
by pinching the skins with your thumb and
forefinger and lifting the skins straight
off. Continue roasting for until the tomatoes
become very soft and start to caramelize.
Remove from oven, and cool on the pan. Then
arrange on plates with slices of fresh
mozzarella cheese and basil. Garnish with
a splach of Extra Virgin Olive Oil and
Balsamic Vinegar and a dash of salt and
pepper.
