Winter Caprese Salad with Heirloom Tomatoes PDF Print E-mail
Ingredients
3 Winter Tmatoes, eg: Rosso Brunosal_wincap.jpg
2-4oz Ovoline Sized Fresh Mozzarella Balls
12 Basil Leaves
Extra Virgin Olive oil
Balsamic Vinegar
Cracked Black Pepper
Kosher Salt

Method
This is a staple recipe of Mozzarella Fresca.
But since most people usually think of Caprese
as a summer time dish, I thought I’d throw a little
twist into that way of thinking by introducing a tomato
that is grown in the wintertime. Introducing the
Rosso Bruno tomato, a variety grown in the Salinas
Valley of California. It’s vine ripened and has a
rich, not too sweet flavor. Whenever I can get a
touch of summer during this cold winter, I’m going
to take it!! To prepare, just alternate slices of
tomatoes, fresh mozzarella, basil and then drizzle
with a bit of olive oil and balsamic!
