Arugula and Roasted Pepper Salad PDF Print E-mail
Ingredients
1 lb Fresh Arugula, cleanedsal_arupep.jpg
4 oz Mozzarella Fresca Fresh Mozzarella Perles
4 oz Roasted Red Peppers, sliced
1 oz Red Onions, sliced thin
1/8 cup Red Wine Vinegar
½ Cup Olive Oil
½ tsp chopped garlic
½ tsp dijon mustard
Salt and Pepper

Method
With the exception of the salad dressing,
there are few exact measurements. The weights
given in the ingredients are a generalized amount,
and your amounts may vary, based on your tastes
and availability of ingredients. Put the first 4
ingredients in a bowl and in a separate boel
combine the remaining ingredients to form the
dressing. Dress the salad and serve immediately.
As the arugula is fairly delicate, it won’t hold
up for a long time once it’s been dressed.
Tip: slice the onions super thin.
