Ceci Bean and Perlini Salad |

Ingredients
4 oz Fresh Mozzarella Perlinis
¼ Small Red Onion, Diced
2 Stalks Celery, Diced
½ Can Ceci (Ganbanzo) Beans, drained and rinsed
24 Grape Tomatoes
¼ Cup Extra Virgin Olive Oil
2 T Red Wine Vinegar
1 tsp Lemon Juice
1 T Dried Oregano
Kosher Salt and White Pepper
Method
This is another tasty salad that is super
quick to make. It can be served as part of
a salad bar, or as a side salad in a small
bowl. Or, another option is to top a mound
of mixed greens with a couple spoonfulls of
this salad for a healthy meal. To prepare,
simply combine all ingredients except the
perlinis and refrigerate for an hour or two.
Right before serving, add the perlini. You
don’t want to add the perlini too soon as
the vinegar tends to cook the cheese making
it tough if combined too soon. Bon Appetit!!
