Chicken Caprese Salad PDF Print E-mail
Ingredients
4 Medium Vine Ripe Tomatoessal_chickcap.jpg
2 4oz Ovoline size Balls Fresh Mozzarella
12oz Boneless, Skinless chicken breasts
4 oz Mixed Greens
24 Basil leaves (about 1 bunch)
Extra Virgin Olive Oil
Balsamic vinegar
Kosher Salt and Fresh Ground Black Pepper


Method
Take the boneless, skinless chicken breasts
and grill either on a bbq, and indoor grill
or under the broiler. When done, wrap in plastic
and put in fridge to chill. Meanwhile, slice the
tomatoes and cheese and pick the basil from the
stems. On 4 plates, arrange the tomatoes, cheese
and basil in alternating slices. Place a small
handful of mixed greens on one side and arrange
slices of chicken on top of greens. For the
dressing, use 3 parts olive oil and 1 part
balsamic, seasoned with salt and pepper.
Drizzle over salad and serve.
