Zesty Melon and Ciliegine Salad PDF Print E-mail
Ingredients
Fresh Mozzarella Cilieginesal_zesmel.jpg
Fresh Watermelon, Cantelope & Honeydew
Red Bell Peppers
Cilantro
Kosher Salt
Cayenne Pepper or
Chili Powder

Method
Using a melon baller, scoop balls of the
three varieties of melon and place them in
a small mixing bowl. Seed and trim red
peppers and chop into small dice.  Chop
cilantro and with the chopped peppers,
add to the mozzarella and mix gently.
Combine a small pinch of both kosher
salt and either cayenne pepper or chili
powder to the melon balls. Taste along
the way for flavor. The salad should be
not-too-spicy. Serve in a small boel or
better yet, in a martini glass. Enjoy!!
