Strawberries with Mascarpone and Balsamic PDF Print E-mail

Mascarpone Cheese
Reduced Balsamic Vinegar

Method
Prepare the balsamic by pouring one bottle
of average, run-of-the-mill balsamic vinegar
into a heavy bottomed sauce pan. Bring up to
a boil and reduce heat slightly. There should
be bubbles, but it shouldn’t be a full on raging
boil. Reduce the amount of vinegar by about 80%.
Don’t over-reduce as the vinegar will thicken-up
as it cools. Set the vinegar aside to cool and
store in an air tight container. Meanwhile,
clean the strawberries and arrange in a small
bowl. Using a soup spoon, take a spoonful of
Mascarpone and spoon over strawberries. Garnish
by pouring reduced balsamic syrup over the fruit
and cheese. Bob Appetit!
