Medjool Dates
Mascarpone Cheese
Chopped Almonds
Method
Cut dates down one side and remove seed. Spoon a little mascarpone into each date. Alternately, you can use a pastry bag with star tip and pipe in the cheese for a fancier look. Garnish with chopped almonds.
Chef’s notes: This is a family recipe, generously given to us by our friend Miss Carolyn. While I prefer the pure flavor on mascarpone cheese with the dates, you can also flavor the cheese with orange zest, cinnamon, cardamom or honey. If you cannot find the Medjool Dates, try the Deglet Noor or Tabarzal Dates.
