Roast Pork with Dolce PDF Print E-mail

Ingredients

Pork loin roast 2-4#
Carrots, peeled, rough chopped 4 each
Onion, white, rough chopped 2 each
Kosher salt 1 tablespoon
Cloves, whole 2 each
Thyme, whole   6 stems
Black pepper, freshly ground  ½ tablespoon
Vegetable oil ½ cup
Olive oil  2 tablespoons

Method Preheat oven to 350f .Preheat skillet on medium heat for five minutes. Coat the surface of pork roast with salt and pepper.  Add oil to preheated pan, increase heat to medium-high. Brown roast evenly – this should take about ten minutes. When finished, place in a baking dish or roasting pan.
Toss thyme, cloves, carrots and onions in olive oil and place the vegetables around pork roast.
Roast in oven to an internal temperature of 160f for well done – less done if desired. Remove from oven and allow the pork to rest for ten minutes before carving.

Serve with roasted carrots and onions – and a dollop of Mozzarella Fresca’s DOLCE!
