Fresh Mozzarella and Arugula Sandwich PDF Print E-mail

INGREDIENTS
sand_arugulamozz.jpg8 slices fresh country style crusty Italian bread
1 lb ~ Fresh Mozzarella Cheese, sliced ¼” thick
Fresh Arugula rinsed and dried & leaves picked
3-4 medium vine ripened tomatoes, sliced ¼” thick
Extra Virgin Olive Oil
Balsamic Vinegar
Fresh cracked black pepper
Fresh ground sea salt
(available at all grocery stores in spice aisle)

METHOD
Slice bread rather thick and lay out on counter. Brush inner sides with olive oil and balsamic vinegar. On 4 of the sides, layer slices of arugula, tomatoes, fresh mozzarella and finish with the ground salt and pepper. Top with the other slices of bread and grill in a panini press or bake 425°f oven until cheese is melting out the sides and bread is golden brown.
