Chicken Parmesan with Fresh Mozzarella |

Ingredients
Ground chicken patties 2 each
Vine-ripened tomato, sliced 1 each
Sesame buns 2 each
Fresh mozzarella, sliced 2 ounces
Parmesan cheese, grated ¼ cup
Olive oil to taste
Mayonnaise to taste
Garlic powder 1/8 teaspoon
Fresh thyme, chopped ½ tablespoon
Seeded mustard to taste
Method
Mix together mayonnaise, garlic powder and fresh thyme.
Broil, pan fry grill one side of chicken patty for 3 minutes. Turn over; top hot side with Parmesan and continue to cook till patty is done all the way through. (If you are broiling, top with mozzarella 2 minutes before the patty is done.)
Dress both bottom slice of bun with mustard, the other with spiced mayonnaise, and build sandwich.
