Crostinis with Mascarpone and Cranberries PDF Print E-mail

Olive Oil
Mascarpone Cheese
Dried Cranberries
                                                                                          

Method
Slice baguette into little medallions. Brush with olive oil. Toast under broiler or in toaster oven.  Cool and spread with Mascarpone. Top with dried cranberries and serve.


Chef’s Notes: Of course, if you make your own cranberries, so much the better. Mascarpone on a crostini can be used as the base for many varieties of fresh, dried and preserved fruit. More varieties coming soon…
