(Serves 4)
Pizza dough - 12 inch
Ricotta cheese - ¾ cup
Mozzarella, low moisture, shredded - 1½ cup
Dried basil - ½ tablespoon
Dried oregano - 1 teaspoon
Garlic, minced - 2 cloves
Fresh ground pepper - 1 teaspoon
Kosher salt - 1 teaspoon
Tomatoes, medium, sliced - 2-3 each
Zucchini, sliced - 1 each
Preheat oven and pizza stone to 400. If using a cookie sheet, grease lightly.
Work the pizza dough into a 12-inch round (or square, if using cookie sheet).
Mix together 1 cup of shredded mozzarella, ricotta, dried herbs, garlic, salt and pepper; spread evenly over pizza dough. Arrange tomato and zucchini on top; top veggies with remaining mozzarella cheese.
Bake till cheese begins to brown – about 15 minutes.
