Mozzarella,
1/3 ounce (Ciliegine) - 1 pound Red grapes, seedless - ¾ pound Cantaloupe,
balled - 1 each Mandarin oranges, drained, juice reserved - 1 can Mozzarella
Fresca Mascarpone - ½ cup Mandarin orange liquid - ¼ cup Kosher
salt - one pinch
Fresh mint, chiffonade - 8-10 leaves
Combine
mascarpone, Mandarin orange liquid and salt. Chiffonade (thinly slice)
mint; reserve some for garnish. Place all mozzarella and fruit in a mixing
bowl; gently toss together with mascarpone dressing. Top with mint and
serve.
