Roast Beef Mozzarella Roll-up with Horseradish Mascarpone |

(Makes two large wraps)
Tortillas, 16” - 2 each
Roast beef, sliced - 1 pound
Mozzarella, sliced - 4 ounces
Carrot, shredded - 1 large
Cucumber, ½ x ½ inch slices - 1 each
Lettuce - 6 leaves
Italian parsley, fresh, minced - 1 tablespoon
Olive oil - 1 tablespoon
Red wine vinegar - 1 teaspoon
Mascarpone - 3 tablespoons
Horseradish, prepared or fresh - ½ tablespoon
Kosher salt to taste
Ground pepper to taste
Mix together mascarpone and horseradish and spread evenly over one side of each tortilla.
Whisk together olive oil, vinegar, salt and pepper in a large bowl and toss together with lettuce and parsley.
Place half of the dressed lettuce on each tortilla and top with carrots and sliced roast beef. Season with salt and pepper and roll so that the tortilla contains all ingredients. Slice in half and serve. (Tip: for slicing into several smaller portions, use toothpicks to help keep round form.)
