Margherita Pizza with Cherry Tomatoes and Perles PDF Print E-mail

Ingredients

Fresh Red Sweet 100, Baby Cherry or
Yellow Pear Tomatoes, cut in half                                                                  
Fresh Basil,
Extra Virgin Olive Oil


Method
Pre-heat oven to 475˚ or highest temperature to bake. Prepare pizza dough according to directions if using store bought, or use the tasty Mozzarella Fresca recipe available on our Web Site. Roll out dough to desired thickness and lay on pizza peel or work surface dusted with flour. Add tomatoes and cheese and bake in oven on a pizza stone or greased cookie sheet until the crust is brown and cheese is melted. Remove from oven and brush the sides of crust with olive oil and sprinkle with chopped basil.

Notes: Use any combination of cherry tomatoes you’d like. Even in the winter time there seems to be many different varieties of tomatoes available. And in the summer, of course, there’s even more. Moreover, because the tomatoes and Perles are about the same size, you can add them to the crust at the same time. You can even mix them all together in a bowl with a little chopped garlic before adding them to the dough. Regarding the dough, if you don’t have your own recipe, the Mozzarella Fresca family recipe works great.
