Italian Sausage and Sweet Onion Pizza |

Ingredients
8 oz Fresh Mozzarella, Cryovac
Pizza Dough
¼ Cup Pizza Sauce
1 pound Ground Italian Sausage
1 medium Red Onion
Fresh Sage
Method
Sauté Italian Sausage and drain excess fat. Set aside and cool. Peel onion, cut in half and cut into ½” slices with the grain. Sauté over medium-low heat until slightly caramelized. Prepare pizza dough according to directions, divide and stretch into two equal sized rounds. Spread pizza sauce over dough. Arrange ¼” slices of mozzarella around dough, making sure to leave spaces between the slices. Top with cooked sausage and onion and sprinkle chopped sage over the top. Cook on a pizza stone or cookie sheet, lightly sprinkled with cornmeal in a 450˚ oven for 10-15 minutes, or until crust is golden.
Notes
Pizza sauce and dough recipes can be found on the Mozzarella Fresca Web Site. But there are excellent store-bought versions available that can be substituted as well. In addition, the pizza comes out best when cooked on a Pizza Stone, available at specialty food & kitchen stores, such as Crate and Barrel, Sur la Table and Williams Sonoma.
