Fresh Veggie Crudite with Red Pepper Mascarpone |

Ingredients for Diping Sauce
1 8oz Container Mascarpone Cheese
1 T. Hungarian Paprika
½ tsp Cayenne Pepper
2 T. Red Wine Vinegar
Dash Kosher Salt
Method
Combine all ingredients in a small mixing bowl and mix with a wire whip. Place in a small dish or ramekin and serve with fresh veggies. For this photo I used: Red Bell Peppers, with the seeds and veins removed; Baby Carrots (these were so small I couldn’t peel them. So, I just washed them thoroughly and left the stem on); tri-color radishes – from the local farmers market; celery; red grape tomatoes; broccoli; asparagus and Blue Lake green beans. But check your local farmers market as the weather continues to improve.
