(Serves Two) 
Ripe red tomatoes - 2 each
Mozzarella Fresca fresh Mozzarella - 16 ounces
Fresh Basil - 6-8 leaves
Extra virgin olive oil to taste
Salt & pepper to taste
Slice tomatoes and mozzarella thinly, alternate in a stack with basil.
Dress with salt and pepper and olive oil. Top with chiffonade of basil.
Serve immediately.
