Ricotta encrusted Salmon PDF Print E-mail
(makes four servings)

Salmon filet - 4 each
Olive oil - ¼ cup
Bread crumbs, unseasoned - 1 cup
Ricotta cheese - ½ cup
Parmesan, grated - ¼ cup
Lemon juice - ½ lemon
Lemon zest - ½ lemon
Salt and pepper - to taste

Move oven rack to the middle of the oven and preheat broiler. Mix together olive oil, breadcrumbs, ricotta, Parmesan, salt and pepper. Press crust mixture on each filet and broil for about 10 minutes, or until crust is golden brown. Turn oven down to 350 and finish fish, about 10 more minutes for medium rare. (Vary time in oven for the desired doneness.) Let rest for five minutes before serving.
