Italian-Style Tuna Casserole |

(makes six servings)
Pasta, cooked al dente - 1 pound
Canned tuna (in olive oil, preferably), drained - 2 each
Mascarpone - 1 cup
Chicken stock - 1½ cup
Leek soup mix, dried - 1 package
Milk - ¼ cup
Parmesan, grated - ¾ cup plus ¼ cup
Preheat oven to 350f. Oil baking dish.
Cook pasta till just under done, drain and toss with olive oil. Set aside.
Mix together all other ingredients (save ¼ cup Parmesan), and then fold in pasta. Transfer to oiled baking dish, cover with foil and bake for about 20 minutes.
Switch oven to Broil.
Remove foil, sprinkle with remaining Parmesan and cook under broiler till cheese is golden brown.
