Lamb Chops with Minted Mascarpone PDF Print E-mail
(makes four servings)

Vegetable oil - 1 tablespoon
Mascarpone, room temperature - 8 ounces
Mint jelly - 3 tablespoons
Kosher salt - to taste
Black pepper, freshly ground - to taste

Preheat serving plates or platter. Mix together mascarpone and mint jelly, refrigerate for 30 minutes.

Heat oil on high. Generously season both sides of lamb chops with salt and pepper; sear on high heat till deep golden brown – about 10 minutes total. By searing on both sides and allowing to rest on warm plates, the chops should be a perfect medium rare. If you prefer them to be more cooked, plan to finish the meat in a 350f oven for an additional five minutes.

Immediately before serving, place a dollop of minted mascarpone on top of your cooked lamb.
