Usually it’s due to the high salinity of the water used in the stretching process, combined with salt being added to the packaging process. Here at Mozzarella Fresca, we try to stay within the limits of recipes handed down from the Old Country, and we feel we do a good job of that. Our cheese has always been produced with the gourmand in mind. We believe you’d rather salt to your taste, not ours. And judging by the number of awards Mozzarella Fresca has garnered, we think our style and flavor profile is just like the traditional product.
