Mascarpone is commonly referred to as an Italian Style Cream Cheese. It is a luxuriously smooth, thick, rich cheese made with pure cream. I prefer Mozzarella Fresca’s Mascarpone as it does not contain any gum stabilizers like most mass-produced cream cheeses familiar to most of us. It is an excellent substitute for Cream Cheese and is used in many dessert preparations, most commonly in Tiramisu.
