Can I substitute ricotta for cottage cheese? PDF Print E-mail
Yes, and in many Italian dishes – especially stuffed pasta and lasagna – ricotta cheese is widely used. Also, our ricotta is lower in sodium than most cottage cheeses.
 
What is the difference between whole milk ricotta and low fat? PDF Print E-mail
Whole milk ricotta is made from 100% whole milk. And low fat ricotta is made in the “old country” style, using 100% whey, a by-product of production of Fresh Mozzarella. Mozzarella Fresca takes great care in producing both using time-honored, Italian cheese making methods and care.
 
My wife and I have a bet, is all fresh mozzarella made from buffalo milk? PDF Print E-mail
No. In Italy, fresh mozzarella is traditionally made from the milk of the Water Buffalo (not to be confused with American Buffalo or Bison). In the United States, over 99.9% of the fresh mozzarella is made using Cow’s milk. Almost of all of the Mozzarella di Bufala available for sale in the U.S. is imported from Italy.
